They don’t seem to have a speed mode like king when turning off the flames. So the only logical reason for them to turn off the flames would be if they are forced...

ACoC is shown to be lightning trails that leak out of a fist or weapon. It is majorly different from CoA black Lightning.
The no touching part isn’t a necessity, since Kaido showed a ACoC strike like the ragnaroku which hit luffy...
