The story seems to imply more that if you have more battles/experience without nicking your blade it will make it black over time so I don't really think Oden would've had that if he stopped kaido/orochi and just chilled in wano for the rest of his life

That's really up to you. I think it shows a very impressive AP feat for Sanji that is a bit overlooked imo.
When I search up. "Goki" in the SFX translator, it specifically cites breaking a bone as an example. "Baki" cites something breaking in half.
