Skipping the dream is pretty logical to me from a narrative standpoint.
That scene had two purposes, Luffy telling the crew and thus implying they have the same standing for him as his brothers and Shanks, and to see the reactions of the crew, people who all have ridiculous dreams themselves...

1) A fight would break out if BB insisted on going further. Whether BB would manage to kill her while Ray has already drawn his sword is very questionable.
2) Marines waited for orders at the beginning of the chapter. Later one of the seriphims that listen to the Marine´s orders attacked BB...
Once again people taking it out of context as children do, same as Greenbull´s situation.
BB would need around high diff for Ray (so very serious fight), while Hancock´s stone threat still being there, while the Seraphims were still there, which probably would have turned it into a extreme...
Law is a swordsman because he can use swordsmanship, which is style/technique to use a sword.
His swordsmanship is not relevant for his DF usage.
