Artistic choice is irrelevant.. Sanji and Zoro parallel their respective opponents, Zoro is going to level up his Black Lightning to Black Flames and Sanji will level up eventually his Blue flames to White flames which directly counter Omen and Imu, that's why Imu went so hard on Sanji...
