I mean , did the Strawhats ever have any kind of connection with their opponents?

Outside of maybe Zoro having heard of Daz Bones before or Who's Who and Jinbei's connection. They never had such personal connection

The difference is this is the final fight. I feel like not giving any of the straw hats barring a personal stake in this fight would be off.

Why would Zoro fight Mihawk in this arc?

To me Shiryu vs Zoro is set in stone with the way Blackbeard inviting him paralleling how Luffy invited Zoro by breaking him out of jail then taking down his jailer together.

Heh in that case Mihawk would need to show up in that same circumstance and Zoro would need to challenge him in that moment leaving his crew alone more probably. Chances are abysmal...

Or... he could for example tag team BB alongside Luffy.

all of the BBPs will have gained DF abilities at the time they fight the SHPs

by the way i think Burgess is the most close to his captain that is why he got to be the captain of the first ship and at the same time he was supposed to get Sabo's DF a logia , but i think since Sabo got the DF and is not supposed to die.
I fear BB might get a reason to kill Aokiji and give the ice logia to Burgess. another possibilty would be the snow logia.

Catarina Devon hunts Beautiful Women so Nami will Fight Her
Van Augur is a Sniper so Usopp should Fight Him
Doc Q is a Corrupt Doctor & exactly what Chopper Hates, so he must Fight Him
Shiryu is a Swordsman who Backstabs & use Invisibility to surprise others, something that Zoro will Detest, so he must Fight Him
Laffitte with his Dancing, Hypnosis & Cane is very suitable Fight for Brook
Avalo Pizzaro is a Corrupt King from North Blue so imo he should Fight North Blue Prince Sanji
Sanjuan Wolf imo will be used as Hype Tool & be Defeated by Luffy or other SHs before Main Fights start (Similar to Blueno)
Burgess is Champion Wrestler so he should face the Super Boxer Franky imo
Finally, Vasco Shot is Heavy Drinker & Jinbe uses Liquid inside Someone to Punch them so they seem to fit, he also looks like a Fishman

So imo:

Sanjuan Wolf vs All Straw Hats at First
Nico Robin reunites with Aokiji

And then:

Sniper Battle ---> Usopp vs Van Augur
Doctors Fight ---> Chopper vs Doc Q
Wrestling Match ---> Burgess vs Franky
North Blue Royals Fight ---> Sanji vs Pizzaro
Females Fight ---> Nami vs Devon
Artists Fight ---> Brook vs Laffitte
Liquids Fight ---> Jinbe vs Vasco
Swordsmen Fight ---> Zoro vs Shiryu
