Just because somewhat didn't really think this one through.

Here they all look blonde. So it would represent their "non modified version".
Pink for Pink Hornet.
Red/Orange for Sparking Red.
Blue for Electric Blue.
Green for Winch Green.
We could ASSUME that "stealth black" DOES NOT break this pattern.
So the change in color in the anime is more likely to be an error, or an intentional change. Since the unmodified versions all have blonde hair, the hair color is due to the modifications working on them.
Sanji's hair would have been Black, had the modifications worked properly on him, to keep the same pattern with the others.

I was talking about the suit color
It's either a mistake, because it should have been black, to keep the pattern, or it was intentional. We saw it "before", when Luffy and Chopper imagined themselves using the suit. It was yellow also.
But considering that, during Law's moment, the real suit was ALREADY revealed, I think it was just a mistake by the anime production.

Still lacks explanation. When was that developed? Because it fits Sanji adult. Judge knew when Sanji was a kid that he was a failure and he left home. He made all suits before their childs were born and knew if they succeded or not? Because makes no sense he making that suit later for Sanji. Also it makes no sense he doing that before they born because he would have better technology later on, unless it was made by Vegapunk.
But still could have being a number 3 before Sanji that used that different color suit.
His suits being black after his pirate name of Black Leg Sanji implies that the suit was made after he had a bounty.

Or it's just some character trait from Sanji, anyway, just like his brothers, his suit was made only for him to use, Luffy and Chopper tried using it and they couldn't. I think they developed his suit like that cuz he is the "black sheep" of his family, they would ask him to get invisible so he wouldn't embarass anyone and he wouldn't need to fight anyway

These suits are top tier technology from the One Piece world, i don't think he casually made it to the current Sanji, otherwise he could make an army of those, but he choose his sons only, he must've developed that just like he did with his sons, Ichiji's hair was genetically modified to be red, as is his Raid Suit for example. Maybe it's just a coincidence that his Suit is the Stealth Black one, but actually Judge must've developed that after their sons have birth, so Sanji being invisible shows that Judge wouldn't need to care for him that much and he wouldn't need to fight anyway, cuz his body and mind were normal and he was considered a failure
