I will use One Piece scaling.

Disney Dooku utterly rapes Maul.

Legends Dooku beats him in a high diff very competitive fight but wins due to superior dueling skills and more patience.

Maul's biggest weakness was his lack of patience. He had everything from skill to raw strength/work put in.

Dooku may lose this simply because of matchup.

Dooku uses Form 2 in duels, which is weak to brute force, which is how Anakin’s Form 5. And Anakin’s form 5 is not as aggressive and as Maul’s form 7. Dooku was quite hard pressed to overcome even Palawan Anakin, whom Maul destroys in a saber duel.

Not convinced Dooku wins this when Maul has matchup advantage.

Dooku's Form II has a direct weakness to Anakin's Form V. Maul uses Form VII so I don't think the same argument can be made.
