As we have come to know, the giants of Elbaf acquired hundreds of books from the lake on Ohara.
Even if one were to be generous, at least half of them concern the Void Century in some way. And to really hammer it down, Saul, a former Vice Admiral with some knowledge about the VC from Nico Olvia and the rest of the Oharans, is also alive and well in Elbaf.
Cue the kingdom formerly known as Lulucia and the king of the world currently known as Im.
Since all the story beats are pointing towards Elbaf as our next destination (and Egghead likely being a short arc) it makes sense that the current conflict will spill over to Elbaf.
With top government agents currently looking for port at Egghead, it's only a matter of time till they get a wiff of Elbaf's importance. With a confirmation that Elbaf harbors a traitor (Saul) with forbidden knowledge, it will make the island a prime target for eradication.
Why destroy Elbaf?
Im's weapon has to make an appearance again, as well as be used one more time at least. Destroying Lulusia, while impressive, does not leave a lasting impact on the story since Lulusia is unimportant in the grand scope of things.
However, if the land of the strong and mighty giants gets destroyed, then that would impact both the readers as well as the characters. And it would serve as a mirror to the distruction of Skypiea and the migration of the Skypieans onto the Upper Yard.

Giants can live for a couple of hundred years. It is entirely possible that somebody's grandparents or great-gramdparents were alive during the Void Century so Elbaf possibly has an oral tradition of the event. Another reason for eradication.
