There are many moments. Following are the moments but not in a preferential order
1) First episode itself when Luffy inspired Koby to follow his dreams irrespective of its difficulty.
2) Luffy when he left some treasures that Nami stole from Buggy pirates (Buggy arc) and avenging the dog.
3) When he got angry about how Kuro treats his nakama.
4) Luffy declaration to Don Kreig.
5) Luffy putting his hat to Nami even without knowing her past. His putting the hat on Nami has so much weight. It is like saying irrespective of your past, you are my nakama and I will trust my nakama with my most cherished treasure. In the same arc, how he tells that he can't do everything and emphasizes on what he can do.
6) His willingness to listen to reason as when he listened to Vivi that not everything can be solved with fists. In the same arc, when he carried Nami and Sanji to the top with so much perseverance.
7) Luffy talking sense to Vivi in alabasta arc and when Vivi said "no one is listening to me anymore" to which he said "I can hear you well".
8) Luffy when he didn't fight Bellamy for no reason.
9) Luffy to Nami in Skypiea "Don't be pathetic, stay calm..you are future pirate king nakama". I think that was the first time Luffy rebuked straight to her face.
10) Luffy dueling Aokiji just so that Aokiji can spare his crew in case Luffy loses.
11) Luffy willing to fight Paulie when he opposed to give ship to Luffy. That scene is pure badass. The waves in background reacted to Luffy's anger with perfect sync in the anime.

13) Luffy bowing to Hancock just to save Margaret and others. Luffy trying to protect Boa sisters honor.
14) Luffy asking Ivankow to treat Mr. 2 even when he himself in dire situation.
15) In FI island, Luffy saying to shirahoshi brother that he was his nakama and his promise to jimbei on how they were going to save FI. Also, his declaration of war to BigMom to protect FI.
16) In Zou, when he told Momo to man up and ask for help instead of living in scabbards shadows.
