The shichibukai are one of the best set of collective designs in the series. A lot of time and thought went into designing them. It would take me hours to compile all the little things Oda incorporated onto them, they are that rich. One great aspect about them is how distinguishable their silhouette is. You can immediately recognize who is Doffy or Mihawk on just their silhouette alone.
Personally, my favorite design out of all them is Crocodile. The crime lord, the mastermind, the mysterious renegade, he has it all. His scar and hook are not only excellent compliments, but they tell a story. A story of a man who has seen so much and endured so much on his path to greatness. Which all led to him becoming disillusioned over his original self.
He is now a shady figure, working in the background. But should he reveal himself, he will end you in spectacular fashion. His use of darker colors on his overcoat hiding a large, golden hook communicate this idea.
Runner ups include Kuma and Mihawk, but they are all fantastic designs.
