Since Yamato will be able to stall Kaido in a 1v1 then that means Sanji will be able to as well but even better.
Yamato is the next Strawhat and afterwards he will not be in the Monster Trio which Sanji is apart of, the icing on the blatantly obvious cake of Sanji being stronger even now.
Yamato will never be a true king.

If it's important for the plot that Yamato somehow manages to stall Kaido even if she's weaker than Sanji, she will stall Kaido.
If Oda wanted Usopp to stall Kaido, Usopp would do it as well. Don't let Page One and Ulti destroying him fool you. :P
I can't think of a compelling argument for Sanji vs Kaido besides if X character does, then Sanji can too.
Sanji had a whole arc dedicated to him, with an extended backstory. Luffy went through a hunger strike to emphasize how important Sanji's cooking was to him. He stated that Sanji was worth more than a thousand men. Finally, he said that he couldn't become pirate king without Sanji. Luffy clearly values Sanji. Has Luffy made these sort of declarations for any other character?
I like hypothetical questions. Does Sanji have a narrative need to fight Kaido? Sanji vs Queen seems like it will be a significant fight beyond Wano. There is a connection between Queen and Judge and Vegapunk. That is more interesting to me than Sanji vs Kaido.

First of all, Yamato is not stalemating Kaido on par. Nothing of that kind was displayed. The implications of the manga suggest that Yamato might be somewhat of a mid difficulty fight for her daddy.
Regardless it doesn't look likely that Sanji is stronger than Yamato or even as strong for now. He's failing to damage Queen abudantly from what we are gazing at, and I doubt he will end up mid diffing Queen for instance.
If Yamato is really capable to give Kaido a decent fight I'm fairly confident she would be capable to attain the job instead.
And this is just linear scaling. So rough guessing. In reality we should also point how Yamato will probably display ACoC if she truly can push Kaido to mid, because she would likely need to damage him other than just defend. It does not look like Sanji can damage Kaido rather onsistently for now, unless he also displays ACoC.
The Monster Trio was never necessarily implicated to be a fixed power level dynamic.
