He'd make him rage quit, that's what I mean, Doffy was shown mercy when he fought Gear 4 Luffy which was a respectful Luffy, not a troll Gear 5 Luffy who acts obnoxious to his opponents and bullies them.
Luffy vs Doflamingo now would be kinda like when he fought Ulti. He's not worried about losing but he doesn't necessarily win immediately (unless he starts with a sky splitter which he very probably won't)
Luffy in gear 5 affects his surroundings just like Doffy does. But since Luffy’s devil fruit power is above Doffy cannot affect the same surroundings as Luffy. The fight will go just like Luffy vs Lucci
