I believe Zoro is canonically referred to as atheist despite his moves ironically having Buddhist and Shinto connotations. As much as I want to say he is the true Japanese archetype.
Jinbe screams Shinto to me easily with his design.
Usopp is definitely Christian. Why else would he be threatening Brook and other Thriller Bark residents with a cross?
Robin could be a Hindu to me. You can make many Shiva/Vishnu connections with her Hana Hana powers on top of her interest in the history of the world.
Everyone else is too hard to determine. They seem like atheists to me.

Robin is: A human secularist, due to her knowledge of the world and the human experience
