Then, you also happen to wield one of the 12 supreme-grade blades.
And then you get matched by a guy who is neither a conqueror, nor does he have a DF nor is he wielding Supreme Grade weapons...

Honestly it's Oda's way of coming up with some bullshit to justify Zoro and Sanji being as strong as they are

Power of "Love" For Sanji

And "Demon Aura" For Zoro

Oda also never has to explain these things in detail, they simply inherently exist with both of these characters, and are what is gonna allow them to achieve whatever they will achieve eos. For Zoro clearly it will be defeating Mihawk for one.
