Ability is not yet explained.

The way I see it.

They become immortal but doesn't stop from ageing. I mean think yourself , if Price is your Span of life , whats the drawback when you're going to be immortal anyway.

Once you're dead , Imu takes full authority of the body giving them More powers , Only Gorosei are awakened if I'm not wrong and their beast looks totally different from Holyknights bar Shamrock.

Holy Knights - continue ageing but receive also a fruit power;
Gorosei - receive the fruit power and stop ageing as well;
Giants - just regen, with aging there is still question mark.

Maybe it just takes more damage. Sommers is still hurt from his fight with Gaban despite him regenerating.

It might be something like he can imbue his haki presence onto his attacks instead of just amping up his attacks. When he goes unconscious his haki dissipates

It's probably Imu, or it's because Gaban isn't conscious. However, it seems that this technique won't work on CoC opponents such as the Gorosei or even Shamrock, if Imu truly helped Sommers.
