With how the story is going I see the straw hats fighting Kaido together then backing off while Luffy gets up after being knocked out again.

Luffy then will fight Kaido one on one in the air over the flower capitol and will knock him into the flower capitol and the entire capitol Will see an unconscious Kaido.

I really don’t see any way for Luffy to defeat Kaido but not get the last hit like he’s said

That was pre adv CoC. If you have read after the part where zoro struggled you would know how easily he defeated king after he unlocked adv CoC.
