We already know haki blooms the best in the battlefield and sanji historically is a character that is doing things solo and learns his shit on his own anyway. Like even in TS he states he just run and fought all the time without any teaching flashbacks like Luffy or Zoro
Like if you want Sanji to learn more haki you should wish for fights that push him extreme diff cause if he gonna talk with gaban the main thing he will talk about is how to impregnate a giantess

Why not fight an opponent in a life or death situation that will be more effective?

Because Luffy didn’t know you could coat things in CoC. Once he knew it was possible from the ragnarok, he was able to do it.

There’s nothing more about haki sanji needs to learn.

Gaban is Sanji's parallel regardless. It being such an important moment for those two to meet with someone Sanji will surpass doesn't detract from Sanji. But after the Straw Hats heard his story, I see no reason why they'd restrict it to those two.
