To be honest I think that his hair is going to go black too since everyone in the germa family has a raid suit that is coincidentaly the same color as their hair. During Sanji´s childhood he wore a yellow shirt and his siblings wore the same color as their hair. So either Sanjis hair will change or he will get a new raid suit. I´m voting for hair.
