I unironically think this could be a thing that could exist

basically, I think observation coating is the highest form of observation haki, even above FS. With this power, the user uses his own observation haki to cancel out other people's observation haki by coating themselves with observation, making the user invisible to observation haki.

It can be used with enhanced speed, invisibility, or FS to make the user effectively invincible. I think as of now, Shiryu is the only person with such an ability. Having mastered CoA, I think he realized he could apply the principle of coating to CoO as well and as a result, created a new technique.

I think the adv of CoO is future sight.
Maybe sanji will got it later or even he already got it.

There might be an ability to combine CoC with CoO which will allow someone to do crazy stuff with time or sensory
But that will rather be counted as CoC ability than CoO ability
