When coby sparred with luffy, he was portrayed to fight with his legs
Also, it seems his haki specialty is CoO (his first awakening and portrayal on the reverie mini arc).
Both coby and sanji also saved viola from being assaulted.
There seems to be a hint of parallel between sanji and coby. Just like the parallel between queen and sanji, this might be a foreshadowing for sanji matchup in the final arc.

Luffy said he believes Koby will eventually be strong enough to challenge him. So that means he'll be way above sanji. By feats, he unlocked CoO before sanji and got trained by a better teacher.
If Koby awakens a form of advanced haki, ryuo or FS, when he's fighting hancock, I'd already rank him above sanji.
