Yes. CoC coating is just using CoC to enhance physical attacks. What Gaban showed is using CoC as a Mass of pure haki. Basically like comparing a basic punch in DBZ to a kamehameha

Mihawk powers are very balanced.
Idk about his observation as of now, But whatever he will have would be superior to anything we have seen, Given shanks had to develop Observation killing in order to fight Mihawk.
Which is again an application in the end. Not a AdCoO 2.0

There is no new level as in no new application imo but stronger characters will have stronger haki like joyboy's haki shits on current luffy's haki.

Haki mass is basically using all your haki in one attack.

There probably is! I am guessing it is related to combining advanced hakis of different (or same) types.
ACoC+ACoO = Observation Killing
ACoC+ACoA = Permanent Infusion (Black Blades)

Maybe Luffy will have ACoC+ACoC, whatever that is…
