Re-read the official. Megumi implied that the last finger is useless, and Sukuna's reaction kinda confirms that.

I think that's in the in story explanation to get rid of sukuna since his fingers cant be destroyed

Again, even if Sukuna cannot manifest, the fingers themselves still contain cursed energy which act like a magnet and amplifier for curses if they devour them. Just look at the cursed womb arc.

His finger can still be destroyed. They just need Yuji to eat it. Since Sukuna cant manifest, there’s no longer any harm to it.
