Brook:i think he will either pass away after meeting Laboon or he is the one narrating the OP story.We could get a panel of him telling this story about Luffy&Straw hats graveyards to some kids in a certain village.Anyway,he should become Soul King once more.
Chopper:travels the world healing people of all sorts of diseases and creating a legend about himself(maybe the bounty gag is so he doesn't get arrested).
Sanji:Meets Zeff again and proposes to realocate the Baratie to the all blue(destroyed red line).
Jinbe:Will tag along the fishman,probably becomes either a king or diplomat for the fishman.
Luffy:Either dies and becomes a martyr or sails the seas as the freest man ever.
Yamato:sails the seas looking for adventures.
