Seems like some top tier Zoan like Marco and King have this ability to change just some body parts, could be that this is theirs hybrid.
About awakening, it has never been indicated that there's any form of awakening for zoans besides what the ID Jailers had, where the user seems to lost control over his own will and become permanentily transformed in this "brainless bulk hybrid" form and unable to go back to human. Chopper monster point seems like a forced version of this with the help of the Rumble Balls.
The fandom created this headcanon that Beast Pirates and Marco would have awakenings, but wouldnt make sense for them to turn in those brainless monsters forever.
