Fun fact, Mihawk didn't beat Zoro by KOing him. He beat him by breaking his Swords, and thus Zoro conceded defeat.

So will Zoro and Mihawk actually fight? Or will it be a mirror of their first encounter, with it boiling down to a single clash, and Mihawk conceding defeat?

We don't have to fight to surpass. Is about respect. We don't fight our master not because we never surpass them but because we respect them and we don't need to prove in a fight that we surpassed. Best way to surpass your master is when they themselves acknowledge you have surpassed them.

Just like Naruto never had to fought Kakashi or Jiraya to surpass them(not that he actually surpassed Kakashi).
