On one hand Mihawk knew he had to show in order to keep his Shichibukai status which granted him peace of mind.
On the other hand he wanted to test his strength against the great Whitebeard. This shocked Doflamingo who just figured Mihawk would show to keep his privileges but refuse to engage in any battle of note, similar to how he played it himself.
For a lone wolf like Mihawk this was a unique opportunity to gauge the difference in strength between himself and WB. Without a crew it's hard to even get a glimpse of a yonko, in a normal scenario he would have had to battle through tons of fodder, veterans and strong yonko commanders. Here he had one yonko, the worlds strongest man, out in the open so he decided to give it a go. And he correctly measured WB not being anything like his prime anymore, only the title remained.

Zoro and sanji don't have to fight people with one eye on luffy and then lose when luffy has a heart attack
