Maybe it's because the WG is trying to downplay Luffy and his crew. Well they atleast are with luffy.

Or it could be because they have grown more notorious in their own right that their family names are unnecessary for them to be infamous. This is the case with sanjo atleast.

I fo agree it could be , maybe zoro family is somewhat famous , sanji name could make it look like luffy has control of germa 66 also since one of there prince is his commander so it's smart for them to remove his , we know luffy Is a member of d clan , so them removing there last names make since in away but time will tell
