Giants themselves don't have special powers other than their size being huge. These abilities except cunning and trickery and temporary augmentation have shown in the past devil fruits before, so I guess the legendary devil fruit allows him to have all these power and also being demonic.

He is a trickster, he could somehow trick Luffy. My guess would be that it would be some sort of eye power as he is currently blindfolded for a reason.

That’s because Pudding wasn’t evil. Luffy can sense people’s feelings very well and as we saw Pudding felt nothing but sadness and doubt the whole time. It’s very possible Luffy mistook her sadness to be about Sanji and less about herself.
