That is not really a known property of seastone. Also, it's rather unusual that excuses are so readily accepted for anything. There is also no explicit explanation given like that, maybe it will be later on, indeed we are supposed to think he is extremely powerful regardless. And certain evasion skills (the same as before), haki or natural resistance should still apply. On the whole this is not really consistent with modern or new power levels. Again, we already had Kaido and Big Mom. Gunko's beating also was just on Dressrosa level. (I still suspect it just comes down to: "we saw Gunko's panties.")

You should reread Udon. Luffy with a mild amount of seastone to still allow him to do physical work was getting bitch slapped around by Babanuki and complained bout his inability to use haki.
And Big Mom got her knee hurt by knocking the ground, durability is directly affected by your current state and Loki been having his strenght drained by pure seastone chains all around his body for 6 years.
