I am just interpreting Odas answer from SBS Volume 95.

What better flower to represent the sun ? (besides Luffy's obvious choice of the sunflower, of course).
I know Oda states that we shouldn't look too much into the meaning of the flowers, but he must have thought something about choosing them. I am not saying it has to be true. The animals Oda chose were also interesting.
