Because AdvCoC can’t actually do permanent damage to immortals… Gaban was telling Luffy and Zoro to go and use AdvCoC and he forgot to mention that Sommers was still able to talk even with head chopped off

AdvCoC immobilizes immortals… It doesn’t kill them

"They are not immortal " in other words you can kill a holy knight unless if gaban meant something else or he forgot to mention some parts then we can say you can leave a scar on the holy knight.

You need ACoC to fight them. At best Oda might give Iva ACoC, as he’s Sanji’s mentor and a pillar of the revos. The rest definitely won’t have it imo.
