I understand that that happened quite long ago when he was a lot younger, but nothing in previous characterization of Roger implied that he would behave like Sanji.

As the story leads us, it says that Luffy is Roger's spiritual successor, and how similar they were, down to their dream, so I expected Roger to be more Luffy-like.
Oh.. this is what I call an illegitimate expectations. The story never told us Roger was like Luffy on everything. The story implicited that what made Luffy and Roger similar was their genuine child-like seeking adventure spirit. In reality, there are many aspect in which Luffy and Roger are not similar, Luffy being asexual for ex, but also in the way Luffy deals with threats, in this case, it's Ace who is Roger like.
It's my take tho, we can agree to disagree with no hard feelings. I plan to re-read the whole Elbaf arc once it ends anyways, because I tend to miss some stuff when reading weekly over a long period of time:)

It's ok, for once, I don't mind. This was an understandable illegitimate expectation. I just think people have projected a little too much of Luffy into Roger/Roger into Luffy, and are not looking at the nuances that are pretty crazy at times. Roger and Ace, in a sense, were very similar to Oden, they lacked a real a strong faith in their pears, so they tend to overestimate their own capacities. Luffy is the opposite.
Yea this is less of a Roger problem and more of a Shakky plot problem. This shit was so unnecessary.
Why ? This was not overdone, it was a funny preparation for a tearfull and heartwarming reunion.. It created a little bit of freshair and humanized the legends that were - frankly - over mysticalized(?)... Really, it was a nice way to introduce god Valley. I think it was a necessary addition at least to create coherency and humanization of the characters.
