Well its hard to use future sight on attacks u don't understand like luffy and apoo. Luffy saw it but can't dodge it cause he didn't understand it. Sanji himself was shocked at the strings afterwards.

Now for the vergo thing his body was injuried by nami he was cocky against vergo he stoood there and took vergo attack willingly instead he could have easiyl dodged it. He underestimated his weakened body and i doubt he even bothered using CoO there.

Katakuri who is known for his observation haki and calmness and accruacary future sight can't hit sanji

King who is known for brute strength anicent zoan CoA monster can't hurt sanji

Oda knows exactly what hes doing i feel like sanji will unlock ADV CoA this arc just like he unlocked future sight in WCI

You realize the Vinsmokes tanked Katakuri + all other BMPs shooting at them with Haki bullets? It literally doesn't mean shit in terms of overall skill. It's a good CoO feat and that's it.
