Him fanboying Luffy IS him caring for his siblings. He recognizes that the oppressive parenting of Big Mom is the true source of evil in their lives, yet he cannot openly defy her and protect his brothers and sisters. To shield them from her tyranny, he assumes the role of the 'perfect' older bro, someone they can turn to instead of their mother. This is why he craves moments of solitude to relax, let his hair down and indulge in his love for food without the constant pressure of being HIM.

Luffy has earned his respect as the one who has the potential to achieve what he cannot, defeating Big Mom and liberating his siblings. Luffy mutually respects him because unlike other antagonists, Katakuri is actually fighting for the sake of his family. He just can't escape Mom

Fuck now y'all reminded me why Mom, Katakuri, and Pudding have one of the best arcs in the series that got retconned in Wano.

He was seeing Luffy's evolution in the fight, seeing him learning to use future sight. Because of that he began to believe that Luffy could defeat Big Mom in the future and free his family from the yonkou.
Big mom made part of her sons hate each other, making them vigiate each other and denounce to her when one of the siblings do some shit (like the opera and mont-d'or plot).
Katakuri was just so pissed that he yell at her in that moment. Just that
