Aren't they supposed to be eternally young + can't be killed unless the mechanical heart they have is destroyed?

It’s a good question since the story current leads us to believe the last Covenant member died before the current generation of the Gorosei. Imu had to explain to them the consequences of a covenant user dying.

Likewise we know Roger’s Pirates didn’t kill any of them, we have no mention of other pirate crews going after them.

The only person who might have recently offed one could be Shanks, post-Harald.
