To answer, that is for Oda to remind everyone that Sanji is a cook, primarily a cook... His main role is to cook, fighting is only secondary...

Remember Usopp, Chopper and Robin highlights so far involve their expertise... That's the same thing with Sanji...

Sanji vs Snack could've pushed Sanji to his limits. Even Sanji vs Oven/Daifuku would've been nice but Oda decided to just give Sanji a few good showings in clashes and Luffy ended up the only one with a fight. Shame but we're in Wano now so we'll see Sanji vs a Calamity and I'll take it.

Sanji is not a fighter, his speciality is not fighting. His speciality is cooking, Oda made him cook a cake to highlight that his speciality is cooking. Dont get me wrong, Hes pretty strong compared to other mere cooks. But he will always be a cook first and Oda wanted to highlight that by making him bake a cake, Infact i dont think he had a real 1v1 against a decent opponent since time skip in which was fought till the end.
