Which are some series that you know are popular/famous but for whatever reason you don't intend to watch it ever?
For me I would say Vagabond, JJK, JoJo, Gintama and maybe Claymore/Monster.
Gintama is too long for my taste. JJK I've read a part of the manga some years ago and I don't like "rewatching" stuff, coupled with the overhype JoJo I don't like the artstyle. Claymore is the one I'm not sure. My friend was watching it while I watched Summer Time Rendering and I peeked at it but idk. Vagabond is just not picking my interest, same for Monster (also because of the number of eps). I prefer shorter seasons nowadays.
All the above have slow start. I can understand why people drop them especially breaking bad. It takes time for them to become better but once they do , they are only peak.
Even I dropped breaking bad and attack on titan as I found couple of episodes at start boring but believe me you won't regret once you push through slow start.

I can't see initial hype like GoT for breaking bad anywhere.
Jojo from S2 is peak but S1 is average. Jojo works a bit differently as all the parts take place in different time and rather than their being one main character , there are multiple.
For example S2 have different MC who is grandson of MC from part 1.
I suggest you directly start watching S2 but you will need to understand some terminologies and power scaling which is very simple at that point.

Ngl because I dislike the artstyle, for a somewhat similar premise/structure that you mentioned (having multiple MCs), I would rather watch the Fate/Stay Night Franchise.

if you love to see some swordsman unsheathe his dick from his pants and it makes your peepee go up, then you would probably think of Breaking Bad as boring. But if you look for the passionate writing and directing and the emersive character acting and dynamics, then Breaking Bad will never get boring.
