Gaban believed that ACoC was the only way to defeat a Holy Knight and you cant kill them, and it seems he only started questioning that after Loki killed his father. This means that even Roger never managed to kill a Holy Knight during his time.

But realistically, couldn’t they have used Observation Haki to examine a Holy Knight’s body more closely? If there was something like a metal heart like sommers, they might have realized that destroying it could be the key. Zoro was able to figure something like that out.

you don’t actually need ACoC to defeat a Holy Knight. Instead, what’s really required is enough raw power and precision to destroy the metal heart that keeps them alive.

Come on man, stories dont dive deep into these unless it is to resolve a current problem
It was obvious that ACoC wont be the only requirement to beat the HKs and the Gorosei since they are either 13 or 18 in number. You cant have 13 or 18 ACoC characters in the current gen who are all going to fight the WG at the same time and beat these bums. Thats why we got the giant suggesting other methods and we see KHam and Sommers being dealt the way they are being dealt with.

The plot point was that HKs had encounters with Roger pirates to kidnap Shanks and they were defeated by the Roger pirates. Sommers reaction to Gaban shows that these HKs were getting their asses handed to them every time.
