Apparently there were some guidebooks about Record of Ragnarok and they have some character profiles as well as data. I am not sure how canon or accurate this is, I believe it is, but it seems to mostly be the stories from mythology. In addition, it might be changed when it comes to the characters and might not be like it is here. Nonetheless, I believe it's interesting and it can be a nice opening for some discussion.
The profiles are the following. The ones I could find at least lol.

Apollo is one of the gods that represent Greek mythology and he garners just as much fear and respect as the chief god, Zeus. His father is Zeus and his mother is the titan goddess, Leto, who was conceived between Coeus and Phoebe. When Zeusโs wife, Hera, discovered that Leto was pregnant with Zeusโs children, all of Greece rejected Leto in fear of Heraโs anger. The island of Delos was the only place that took her in. In that land, she gave birth to Apollo and his younger twin sister, Artemis, goddess of the hunt. The island of Delos received the blessing of the two gods and became one of the most prosperous islands in Greece. Apollo is a god that presides over many human activities such as prophecies, music, cattle, archery, medicine, and purification. As music and the liberal arts were irreplaceable in Greek education, Apollo was worshipped as a god of philosophy as well. However, Apollo was also a remorseless god.
Together with his twin sister Artemis, he murdered the titan Tityos for raping* his mother. And another time, when he learned that the goddess Niobe was bragging about having more children than Leto, he killed all of her children as punishment for her arrogance. Apollo is an expert at archery, the arrows fired by him never misses their target, and when fired to punish humans, his bow also spread diseases. The god of medicine was also capable of controlling diseases. Apollo is a god that heals and kills others on a whim. Apolloโs son, Asclepius, was also an excellent god of medicine, but he was struck by Zeusโ lightning bolt on the account that he went against the order of nature. Grieving from his sonโs death, Apollo killed the cyclopes that forged the thunderbolt for Zeus. As punishment, Zeus sent Apollo down to earth as a slave. Apollo was eventually forgiven, but then he colluded with Poseidon to remove Zeus from the throne.
However, his plan was exposed before being put to action and he was punished for it. Despite being a god that places heavy emphasis on reason and harmony, Apollo carries out many foolish acts, even when compared to humans, that simply arenโt worth it. Rationality and irrationality are both present in him, making Apollo a god that is difficult to comprehend. Apollo was also described as a God that โshines radiantlyโ and eventually gained the position of Sun God. However, his heart loved the pure north pole encompassed in ice, and is said to have sometimes left Olympus to visit the world of Norse Mythology. As an eternally young intellectual, Apollo is the most handsome god in all of Greek mythology. However, his stories of romance with humans often end in failure. While his father, Zeus, swept up countless beauties from the human world with his humor and attractiveness, Apollo gets rejected all of the time. This is because humans who are fated to grow old find it difficult to be together with Apollo who is eternally young and beautiful. In that way, Apolloโs key characteristic is the extremely bipolar light and darkness, yin and yang, that appears from within him in certain situations. When he fights in Ragnarok, Apolloโs bipolar nature is sure to greatly confuse and torment his opponent.

1- Anubis is the deadliest demonic dog god in Egyptian mythology (the term jackal is not used).
2- He was the ruler of Egypt and is portrayed as the king of the underworld, inventor of mummification and "expert in death".
3- He helped rebuild the body of Osiris after it was destroyed by his brother Seth.
4- He is one of the oldest gods, being so, in ancient Egypt, he began to be worshiped since 3000 BC.
5- Anubis uses a scale to measure the sins of the dead. If these were greater than the value of the soul, the person was not allowed to resurrect and his heart was devoured.
6- He is the only representative of the Egyptian pantheon in the ragnarok because of his power (this god will give much to be desired).
7- The traditions of Anubis were kept in ancient Egypt, since he had a very fervent cult.
8- The guide points out that it is likely that we will see the judges of the underworld in the ragnarok (I do not know if it refers specifically to the Egyptian judges who are Osiris and Thoth (along with Anubis) or judges of the underworld of other mythologies).

1- Odin is the main god of the land of the gods, Asgard. This god serves as leader only.
2- He is one of the pillars of the Scandinavian pantheon, like his son Thor, who is the most powerful warrior of Asgard.
3- Odin does not have a warrior role like Thor, being so, this god only focuses on strategy and magic because this last one, he achieved it thanks to drink from a spring at the base of the Yggdrasil tree, which gave him an unparalleled wisdom, in exchange for the loss of one of his 2 eyes.
4- Odin's forte is the magic of the runes, since he specialized in the use of these, reaching a great mastery in his domain.
5- Odin in his greed for wisdom, went to Yggdrasil, where he pierced himself with his spear called Gungnir, suffering for nine days and nine nights, managing to become the leading god of the Scandinavian pantheon, surpassing all other gods in wisdom and knowledge.
6- The gods of the Norse mythology were destined to die by the Ragnarok from the moment of their creation, and this fact, could not be avoided even by Odin himself, who with his immeasurable wisdom and power, could not find a way to stop the Ragnarok. ( maybe he transformed it into a tournament; I'm just saying xd )
7- Odin to counteract the Ragnarok, sent an order to the valkyries, which was that they should collect all the outstanding dead and should send them to Valhalla for their preparation.
8- These warriors became Einherjar, and day after day they undertook extensive training to prepare for Ragnarok.
9- This god is portrayed as an angry old man, who has 2 ravens called Hugin (thought) and Munin (memory), which help him to observe the world in silence from his throne, Hlidskjalf.
10- Odin when he is ready to go to war, rides his eight-legged warhorse, called Sleipnir, along with his golden armor and blue cloak, accompanied with his spear Gungnir, a magical spear known as the spear that never fails.
11- When Odin appears, he brings good fortune, but then, he takes it away, so he was worshiped by the Vikings, as many wanted to be recruited by him to fight in the ragnarok, but many hated him for destroying the fields and he was seen by them as a god of destruction and murder.
12- Odin is a wise god, but that knowledge he only uses exclusively for his own purposes, even if these are negative for the rest.
