Sanji is a cook who transforms himself into a warrior to fulfill his captain's dream.

They're two sides of the same coin.
Power made selfless.
And selflessness made power.
Sanji is a fighting cook whose career had been stopped if he wasn't son of Judge

If Sanji wasn't Judge's son, his powerlevel would have capped at Sai
Folded by the likes of Vergo, but strong enough to beat the likes of Lao G with some difficulties

Years? In universe it is going to take Zoro a couple weeks to master Conqueror's Haki after awakening it in Wano

And he didn't even know he had it until being told in Elbaph, the only reason Sanji is going to unlock it and master it now is because he was told just like Zoro

They're in the same boat, only since Zoro has already awakened it he will probably learn to infuse it faster

Sanji is not "cook transforms into a warrior to fulfill captain's dream"
He is more like fighting cook transforms into Judge's son to stay relevant in powerlevel and fulfill captain's dream

Sanji has been nerfed the entire series

He has been holding himself back with his self depreciation with weakens his potential

In a single arc Sanji will achieve what Luffy and Zoro took years to do, and he is gonna kill an immortal on top of it.
