Oh nonooono as offense itvd be a superb buff for sanji since he'd be imbuing haki into his flames.. remember Kaido's reaction after red roc and then how he dodges red hawk+ acoa in his hybrid when just initially Luffy and gang as mentioned by law or kid thay they weren't even putting a dent in kaido's hybrid..
bbased on that alone people started theorizing Gear 4 or 5 will offer fire or heat.

Ryou is the ability to flow your haki beyond the material you're flowing it through, if it's either you're weapon or fist. It allows both an offensive and defensive upgrade, and can even create a force that can be used as either a shield or some force attack.
Sanji has not showcased Ryou as we know it.

I could be wrong, but I thought ryou has a barrier around it like
I could be wrong but when he hit Kaido there was no aura around his hands, when he used ryou in Udon there was an aura around his hands, and when swordsmen use it there is an aura around their blades, I thought red roc was the gear 3 upgrade to red hawk.

You're not entirely wrong here but Advanced CoA can be used for defensively and offensively. He needed CoA to harden his legs so he can withstand the flames better. That much is true. However, Sanji needed a better damage dealer against Queen so Advanced CoA is perfect for that. Remember, Sanji stated that his weight aka strength and speed are different levels above.
About the third level of CoA, if you look at the last Sanji panel carefully, you can see the explosions behind Queen when he got send flying by Beef Burst, and Sanji attacks him from the front, that makes me think that was level 3 CoA. "Destroys them from the inside out", Sanji basically hits through Queen's body.
