We know that when Sanji wore the raid suit it also gave him some headphones and glasses. Which likely means they do something at least the headphones. While he obviously doesn’t have the raid suit anymore that doesn’t mean the exoskeleton can’t also boost your senses. The raid suit just enhancing it further just like it further enhances everything else

Xebec as an insensitive brute with zero stealth feats easily made it into Imu's garden.

It's not that hard to sneak into MJ, but rather getting out alive. Also the present shichibukai didn't give a shit and the fat goat enjoyer couldn't have caught him anyway.
More importantly, he made a good proposal so no one gave chase.

The Vinsmoke mods Grant the user super-human memorisation and processing (at least that's what the Vivrecard Databook), so if Sanji's processing ability is amplified + onvservatuon haki he might unlock an advanced application of observation haki whereby he'll be able to (at least from his frame of reference) perceive everything in slow motion. This would make him almost impossible to hit unless someone can use future sight.
