Even EOS Sabo will most likely be extreme diffing an admiral, will Sanji be as strong as him EOS? I think not.

Sanji can't solo an admiral because he needs;
1. Advanced coa and adcoc
2. Long range attacks
3. Admirals are too close in strength. I don't think Sanji will be on the same level as Akainu

Only way would be if Oda reduced the Admirals level

I will cry a little if Sanji fights this dude tbh. Such a trash character. The gags he is doing in fights though will fit in with the general trend of Sanji fighting the strong, joker type 2nd strongest underlings.
The sword though could just about swing the match up to marimo.
He has such lame powers. Zoro would be dicing the plants like cabbages while Sanji by EoS will practically be a walking paramecia mera mera mi user with flames so hot he hard counters the shitty vines

You got your answer, Lanji is not hard countering anyone that Zoro fights. Not that the rest of your post makes much sense, Sabo is the Flame Emperor for a reason.
