I agree. But maybe Katakuri could get a power-up, becoming much stronger than he was when he fought Luffy, and then the fight will be more fair.
It will be fun if Sanji is shown beating in a clear way an enemy that Luffy couldn't beat properly.
It may even be said that Sanji has already beaten Katakuri;
Sanji being able to easily avoid Katakuri's surprise attack, leaving Katakuri with a stupefied face of someone who failed terribly, was Oda's way of pointing out that Sanji was already superior to Katakuri in Whole Cake Island.
