I would go with Enies Lobby arc , that arc was iconic and one of the best OP arc.
There is nothing to criticize Sasuke recovery arc either...but it is less memorable compared to EL arc...I had forgot about it till I saw this thread..

A healthy Kimimaro was equal to Hebi Sasuke my dude, even bedridden and on life support he was a beast. Gaara was lucky in that fight

There was no point in making Kimmimaro that strong. Lee deserved a W, they shouldve made him fight someone weaker. Hell at the very least let Gaara win. Dont just magically let them win via luck.
