Well, that's more of a anime problem. Toei doesn't animate Sanji's Diable Jambe correctly and smoothly most of the time.

Keeping the Z vs S aside
There are a lot of things I liked about S
His backstory, his childhood was so damn traumatised, oda could've handled the gag better later on
His kindness towards others
The iconic walks along with other SHs
His character is pretty developed n well structured
The moment where he wanted a second chance with Luffy
His iconic moment with Zoro where he was as ready as Zoro to sacrifice himself
Him agreeing with Zoro on the matter of usopp n even going against Nami
There are a lot of things I liked about S
