This is the only one to go off of, but remember how Oda has visibly aged a lot of the older guys in the series like Garp, Rayleigh, WB etc. over a span like 20 years.
and the "even for us" is only more emphasis that they consider themselves as legendary, so this DF even predates them.
I've had a theory for a long time that the Gorosei operate on a rotating system. Every few decades/half a century/century, new members will replace those that have died. It's implied that becoming an Elder is a lifetime position and that the members are handpicked by Imu or the system since birth/childhood.
1) All of them have scars of some sort which implies harsh training's or even engagements with enemies.
2) The young, Blonde elder gave it away...unless he became immortal at that age from a long time ago...
3) Imu would not want a bunch of immortal people in power that high up who would eventually learn all the knowledge and secrets. This is a good way to keep in power and others in line.
4) There may be some advanced method that extends their lifespan or reduce aging, we know humans can live for around 140 years or more when looking at Dr. Kureha. Other characters like Garp, Sengoku, Tsuru, Kong etc are all quite old and in good health.

I was thinking, either their not all immortal, or maybe they’ve been joining the ranks steadily throughout the centuries. It’s really only the young guy who’s panicking, maybe he’s a newcomer.
So like Gandhi born 700 years ago, extraordinary guy, so the OP fruit is used on him before he dies.
Then the next one is Gorbachev, 500 years ago, fruit used.
And so on, with the blonde young guy being considered the next candidate, but one that hasn’t needed the OP fruit experiment.
Their age is weird because they haven’t aged since Robins flashback 20 years ago.
So it’s possible that they are able to slow their aging somehow or it’s going to be like a 7DS thing where Imu has the ability to stop the time of certain individuals making them semi immortal
If they are all immortal I would bet Im sama so should be odds wise but I wonder, did Law's DF get used on them? Is that the legendary DF they were discussing about? 🤔
