I think the following matches are clear:

Luffy vs. Teach - Fight for the crown
Zoro vs Shiryuu - Fight of the Swordsmen and 2nd strongest
Jinbei vs Burgess - Fight of the two official helmsmen
Usopp vs Van Augur - Fight of the Snipers

the rest are speculations.
Chopper fits to DocQ since both are doctors but on the other side literally no one fits to Sanjuan Wolf except Chopper and his giant form.
Katarina Devon fits to all women since she‘s targeting the heads of beauty women. But my guess is Yamato vs Devon because of the historical Ninetails vs white fox match.
Laffite fits to Sanji, Brook and Robin.

Most excited I‘m for Luffy‘s fight just because we got to see more from Teach, his Devilfruits and probably some other important informations. But Zoro vs Shiryuu could be also interesting especially when it really came to Shiryuu who won over Mihawk before.
