1 touch from Aokiji was enough to instantly defeat Jozu and make him lose an arm. Even if it was after Jozu dropped his guard (which is his own fault anyway) it's still an easy win con from Aokiji to just touch him and win.
Not to mention that he can't cover his entire body in diamond and move/attack at the same time. He can only partially cover it if he wants to do so. And experienced fighters like Mihawk or the admirals could easily take advantage of those openings (like Doflamingo did when he used his parasite string on him).
