LoL....Doffy is just a poor version of "joker"....he is overrated as fuck....Crocodile on the other hand is badass villain and Katakuri ain't one dimensional and just an opponent to Luffy...
coincidentally Luffy wants to surpass only Crocodile and Katakuri while he considered Doffy ain't worth his time to surpass.....

Katakuri is a failure of an antagonist. Nothing about him is remotely interesting. Oda tried to make him interesting at the last moment and it didn't work out for anybody but the ones who look for a show.
Doffy was built up over 450 chapters before he was introduced as a villain. And he was fleshed out and a made into a significant linchpin of the New World.
